Fermentation is a technique that has been used for thousands of years, even when the world of microorganisms was unknown and invisible to human eyes. With the discovery of the microscopic world and the thousands of pathogens, we turned towards sterile practices, forgetting the virtues of good bacteria and microorganisms. For some years now, thanks to scientific advances in the study of the microbiota and the work of people who love fermentation, there has been a renaissance of these techniques.
In this workshop we will briefly explore the biological history of bacteria, and other microorganisms, which were the first living things on earth and have colonised every corner of the planet. We will focus on the interactions of microorganisms with humans, and in particular the microorganisms involved in fermentation.
We will explore the different types of fermentation and the basic techniques, materials and safety measures for fermentation at home.
We are an ecosystem and fermentation is an act of food sovereignty, of self-discovery — an endless delicious adventure.
The world of fermentation is beneficial for everyone but, in the case of particular pathologies or imbalances, one should approach it with greater caution and, if possible, with ‘expert’ guidance.

Maria Teresa Anfossi
Doctor specialising in gastroenterology and digestive endoscopy with a focus on the study of the intestinal microbiota, centre of the PNEI (psycho-neuro-endocrine-immunological) system.
Expert in integrative and systemic medicine, phyto and mycotherapy, Bach flower therapy, psychosomatics and energy balancing.
